DISTINGUISHING FEATURES OF THE CLASS:
The Corrections Cook performs a variety of moderately dif?cult volume food preparation tasks. The incumbent
is responsible for the supervision and training of inmates/juveniles assigned to the foodservice for work detail.
Training is provided in foodservices, which consist of food preparation, food safety, and sanitation. The
incumbent is also responsible for the full range of kitchen duties normally encountered in a jail or correctional
foodservice.

ESSENTIAL FUNCTIONS:
0 Demonstrate and maintain proper work ethic with inmates/juveniles assigned to kitchen that do not violatePREA or department policies.Communicate and supervise appropriately classi?ed inmates/juveniles in foodservice.Follow policies pertaining to safety and security when working within secured areas of DRS.Prepare or direct preparation of regular and special diet foods according to prescribed menus and recipes.Follow established schedules in cooking, baking, sanitation, and related activities pertaining to Food Codeguidelines.
0 Monitor inventory par levels of food and non-food items on hand determined by recipes and menus used
within the foodservice.
0 Demonstrate continuous effort to improve operations, decrease turnaround times, streamline work procedures,
and work cooperatively and jointly to provide quality seamless customer service.
0 Understand and complete required paperwork daily.REQUIRED KNOWLEDGE, SKILL AND ABILITY:Knowledge of methods, materials, and practices of volume food preparation.
Knowledge of sanitary methods used in food preparation and related activities.
Knowledge of inventory and ordering methods.Knowledge of safety protocol requirements working within a correctional facility.
Ability to adhere to DRS safety protocol.
0 Ability to prepare palatable meals according to speci?ed menu and schedule with a minimum of waste.Ability to use standard food preparation utensils such as knives, spoons, tongs and whips and power drivenequipment such as a meat slicer or mixer.Ability to supervise, train and coordinate the work of inmate workers assigned to the foodservice.Ability to teach inmates how to cook, read recipes, clean and sanitize foodservice.Ability to perform physical inventories and keep records.Ability to observe or monitor objects and people’s behavior to determine compliance with prescribedoperating or safety standards.Ability to comprehend and make inference from materials written in the English language.

REQUIRED EXPERIENCE AND TRAINING: High School diploma or GED and minimum of two (2) years experience in the institutional or commercial food
industry or food service work within a detention facility.

ADDITIONAL REQUIREMENTS:
Must be at least 21 years of age, with no felony or domestic violence convictions.Current Food Handler Certi?cation (i.e., GRIC, ServSafe, etc.) or obtain within 60 days of employment.Current TB skin test.Required mandatory reporter pursuant to Title 7, Chapter 2 (7.205), B.Required to attend Title 7 Mandatory Reporting training on a yearly basis.Required to pass a ?ngerprint and background clearance check as a condition of employment and mustcontinue to maintain throughout duration of employment. Background checks are required for positions thatinvolve regular contact with or control over Community Children in accordance with The Indian ChildProtection and Family Violence Prevention Act, 25 US. C. Sections 3201 through 3210 and C.F.R. Part 63and positions that have regular contact with the Elderly.
0 Required to obtain a Tribal Driving permit. Valid state driver’s license with a current proof of driving record
for the past 39 months will be required to qualify for a tribal driving permit. Proof of driving record must
be submitted with application and must not be more than 60 days old from the date of submission of
